It stands on a set of four, 6" adjustable casters, two of which are locking. The cabinet, fry tank, crumb scoop, and clean-out rod are all constructed of stainless-steel. This model features millivolt thermostatic control behind the door that can adjust from 200 to 400 degrees Fahrenheit. The millivolt system requires no electric hook-up. If something goes wrong and the temperatures get to high, a hi-limit shut off valve will activate. This will shut off the gas connection and standing pilot. This is an exceptionally important feature to have in a fryer for the safety of your employees. Everything tastes better when it's perfectly fried, so be sure to fill up the twin baskets with all of your unique recipes.

At the bottom is a V shaped cold zone. A fryer that has a V shaped cold zone will work especially well if you're looking to fry foods that come frozen.
