  • We proudly offer custom hood system fabrication for non-standard kitchen layouts. Our master fabricators will construct custom hoods to run safely and efficiently in all spaces ranging from smaller single-chef kitchens as well as expansive multi-station kitchens.

Exhaust Fan: CaptiveAire DU85-SC 1250-3000 CFM, 1HP, 1Phs. 115v 60Hz., 10.2 AMP 24-7/8 base

Centrifugal upblast kitchen exhaust fans are designed to remove foul air, smoke, fumes, odor, and grease laden vapors from indoor environments. These cooking exhaust fans have an upblast discharge, which will expel the stale air away from the roof surface or building walls. Commercial exhaust fans are necessary for an optimal indoor environment.

  • Heavy duty construction, durable and weather resistant
  • Non-overloading backward inclined wheels, blades and inlets fabricated from 3003-h34 aluminum
  • Forced fresh air through the motor compartment cools motor and ensures long motor life
  • Quick release latches allow for easy access to motor compartment
  • Variable pitch motor pulley allows for field adjustment and system balancing
  • High efficiency combined with low tip speeds result in quiet operation
  • Standard emergency disconnect switch

Make-Up Air Fan: CaptiveAire, A1-G10D 1200-2850 CFM 1 HP, 1 Phs. 115V 60Hz, 10.2 AMP

Make-up air fans, also called return-air fans are designed to bring fresh air from the outside back into your building. This fresh air is to 'make-up' for the air that is being sucked away from your building via the exhaust fans. By providing a fresh air balance, your air conditioning will not have to work harder to compensate for the loss of air meaning lower energy bills.

  • Emergency disconnect switch
  • Spun aluminum housing for rust free weather resistant durability
  • Propellers constructed with die formed blades riveted to a steel hub
  • Can be roof or wall mounted
  • Standard bird screen
  • Wire conduit to provide a clear channel for electrical connections.
  • ETL Listed and complies with UL 705 standards

Roof or Wall Curb Flashings for exhaust and make-up air fans

Roof curb flashing is used as roof support structures for fans. Careful consideration goes into choosing the correct vent hood system components. The same consideration should also be taken for the penetration points on your roof and the type of roof curb flashing used. As part of our JRSVH Packages, we proudly include our JRS Roof Curb Flashing available in standard and custom sizes.

  • Constructed of 20 gauge galvanized steel
  • Size measurement: Sized to fit exhaust fan bases
  • Flat roof curb included

    Includes:

      • JRSVH10 Type I Commercial Grease Vent Hood - 120" W x 48" D x 24" H
        • Baffle filters
        • Stainless steel grease cup
        • Pre-wired light(s)
        • Hanging brackets
      • Exhaust Fan: CaptiveAire DU85-SC
      • Make-up Air Fan: A1-G10D
      • 2Flat Roof Curb Flashing (Wall and Pitch Roof Curb "Not Include" options are available)
      • Supply Air Plenum
    • Pitched roof fitting is available for an additional cost of $175
    • Wall mount curb is available for an additional cost of $150

Perforated Supply Air Plenum Chamber

  • 100% stainless steel construction matches exhaust vent hood
  • Provides up to 80% make-up air
  • Guides make-up air near the hood and directs air toward the capture area of vent hood
  • Disseminates make-up air evenly along the length of the hood through the perforated diffuser plates
  • Easy installation

Project Spotlight: 10-Foot Commercial Kitchen Hood System

At Jean’s Restaurant Supply, every hood system we provide is designed with one primary goal:

Maximum efficiency, proper airflow, and long-term performance.

This project features a 10-foot commercial kitchen hood system designed specifically to meet the customer’s operational needs while maintaining safety, comfort, and code compliance.

System Overview

For this installation, the customer selected a:

  • 10-foot stainless steel canopy hood
  • Designed using 200 CFM per linear foot
  • Total exhaust requirement: 2,000 CFM

Rather than oversizing the system, we calculated airflow based on true demand, ensuring the kitchen receives effective ventilation without unnecessary energy loss.

Designing for Efficiency

Efficiency in a hood system begins with proper containment.

To improve capture performance and reduce exhaust demand, this hood includes:

  • Vertical side panels

By closing off the sides of the hood:

Drafts are minimized
Heat and smoke remain contained
Less exhaust CFM is required
System performance improves

A hood that controls the air beneath it is a hood that operates efficiently.

Exhaust & Duct Design

Based on the required 2,000 CFM and a target duct velocity of 1,500 FPM, we designed:

  • 12” × 14” exhaust duct

Due to structural obstructions, the system required a:

  • 12-inch offset

To prevent static pressure issues, all offsets were designed with:

👉 Full radius elbows

This is critical because sharp transitions increase resistance, forcing the fan to work harder and reducing system efficiency.

Fire & Safety Considerations

For safety and code compliance, we specified:

  • Two-hour fire wrap on the exhaust duct

This protects surrounding attic and roof structures by preventing heat transfer in the event of a fire.

Additional components included:

  • Roof flashing
  • Proper roof curb
  • Direct-drive exhaust fan

Exhaust Fan Selection

We supplied a:

  • DU85 Direct-Drive Exhaust Fan

Although capable of higher airflow, the fan is:

Adjustable
Tuned to deliver the required 2,000 CFM
Designed for optimal performance without over-exhausting

Direct-drive technology allows precise airflow control and improved reliability.

Make-Up Air Strategy

To balance the exhausted air, the system includes:

  • Untempered make-up air

While conditioned make-up air offers maximum comfort and energy efficiency, the customer elected untempered air with full understanding that:

  • Outside air temperature enters directly
  • Kitchen comfort may vary seasonally

Proper education ensures informed decisions.

Air Separation & Code Compliance

To prevent cross-contamination and air recirculation:

  • Exhaust and make-up air units were positioned 10 feet apart

This prevents smoke or grease-laden air from being drawn back into the building.

Make-Up Air Distribution

The make-up air system includes:

  • 20” × 20” supply box
  • Two 10-inch ducts
  • Designed at 700 FPM velocity

Air is delivered through the hood’s front plenum risers, providing balanced replacement air without disrupting hood capture.

Why This Matters

A hood system is not just stainless steel over equipment.

It is a precision-designed airflow system that affects:

  • Kitchen temperature
  • Employee comfort
  • Energy consumption
  • Equipment longevity
  • Overall restaurant performance

Anyone can hang a hood.
Designing it correctly is what protects the investment.

Jean’s Restaurant Supply Commitment

For every hood project, we focus on:

Correct CFM calculations
Efficient exhaust design
Static pressure control
Proper duct sizing
Fire safety compliance
Balanced air systems

Because a properly designed hood system saves money, improves comfort, and prevents long-term operational problems.
